Zucchini Fritters

Gluten Free Keto
A high protein, low carb snack or meal using Just Natural Clean Lean Protein.

Ingredients

1 medium zucchini, grated and water squeezed out

2 eggs

½ teaspoon of turmeric powder

¼ cup of parmesan cheese 

2 tablespoons of Just Natural Clean Lean Protein

1 tablespoon of olive oil 

Salt and pepper

Protein packed, low carb and super easy to make, these zucchini fritters will go down a treat. Pair with a nice side salad and you have yourself a meal! Make more of these the night before and take them for lunch the next day. Made using Just Natural Clean Lean Protein.


Method

  1. Grate one medium zucchini onto a paper towel and squeeze out the excess liquid 
  2. In a large bowl whisk two eggs with the turmeric powder and parmesan
  3. Fold through the grated zucchini and Clean Lean Protein Just Natural till combined 
  4. Season with salt and pepper 
  5. Heat the olive oil in a medium sized frypan and scoop the mixture evenly into the pan 
  6. Fry for 3-4 minutes each side till golden 
  7. Serve with sides
