Nut Free Protein Balls
All the sweetness, all the chocolate and none of the nuts.
Still packed with protein and still delicious!
Super easy snack idea for the kids, work or just to eat.... well because!
4 medjool dates, pips removed and soaked in boiling water for 5 minutes, drained
½ cup pumpkin seeds
1 cup desiccated coconut
1 tsp vanilla essence
1 Tbsp maple syrup
2 Tbsp cacao powder
½ cup coconut oil, melted
Combine everything in a food processor and pulse until smooth. Form into balls using damp hands. Chill until set in the fridge, at least one hour. Store in the fridge
