Maple Walnut Clusters

Ingredients

200g Oats

1 serve Clean Lean Protein Smooth Vanilla

1 tsp Salt

2 Tbsp Peanut Butter

4 Tbsp Coconut Oil

2 Tbsp Avocado Oil

4 Tbsp Maple Syrup

4 Tbsp SweetNZ Golden Brown Sweetener

60ml Water

100g Walnuts

50g Noshu sugar free baking chocolate chips

These delicious breakfast clusters are easy to make and are great as a bowl of cereal, as a museli with yoghurt, as a chia seed pudding topper or as a snack on the go. They are loaded with plant based protein, good fats and complex carbohydrates to fuel you for whatever you want to do! The flavour combination options are endless, mix them up to suit you!

Add the oats to a large bowl. Add the water, melted coconut oil, avocado oil, maple syrup, Clean Lean Protein, salt, SweetNZ Golden Brown and peanut butter to a blender and belnd til smooth. Add the wet ingredients to the oats and mix to combine. Add the walnuts and the chocolate chips and again to combine. Press into a baking dish or baking trayand bake at 150C in a fan forced oven for approximately 25mins. Remove halfway through baking to break the cluster mixture up a bit and place back in the oven to finish baking. Once baked and all golden, remove from the oven and allow to cool. Break into pieces and store in an airtight container.

 Serve with milk or yoghurt for breakfast or keep them on hand for a simple snack during the day. They also make a great layer in a parfait or the perfect chia seed pudding topper. Who needs cookies with your cup of tea when you have protein packed maple walnut clusters! Enjoy!
