Protein Pumpkin Muffins

However, your options don’t end at sweet yet unhealthy treats. With just a few simple ingredients that you probably already have in your pantry, you can enjoy your favorite fall flavor, but without the empty calories and risk of putting on the fall fifteen. Enjoy these protein pumpkin muffins anytime, including a healthy breakfast, afternoon snack, or office treat. These muffins are vegan and gluten free and free of refined sugars.

  • 2 Cups Gluten Free Flour
  • 2 Scoops Clean Lean Protein Smooth Vanilla
  • 1 tsp Cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp Nutmeg
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Apple Cider Vinegar
  • 1 tsp salt
  • 3/4 Cup Coconut Sugar
  • 1 Can Pumpkin
  • 1/2 Cup Vegan Butter
  • 1/2 Cup Maple Syrup
  • 1 Flax Egg (1 tsp of ground flaxseed mixed with 2.5 Tbsp water)


Preheat oven to 375 degrees

Combine dry ingredients

Mix in wet ingredients

Place in greased muffin tin

Bake for 20 minutes
