- 1 heaped scoop Clean Lean Protein Smooth Vanilla
- 1/2 cup cashew nuts
- 1/2 cup almonds
- 1/2 cup desiccated coconut, plus more for rolling
- 1/4 tsp sea salt
- 1/4 cup almond butter
- 1/2 cup dates
- 1/2 tsp vanilla extract
- Juice of 1 large lemon
- Zest of one large lemon
Using a blender, or food processor, blend the almonds, cashew nuts, coconut, sea salt and Clean Lean Protein into a fine crumb.
Add the almond butter, dates, lemon zest, lemon juice and vanilla extract. Pulse to combine.
Take a tablespoon of the mixture roll it into balls and then coat in coconut.
Store in the fridge for up to 5 days or freeze up to 4 weeks.
