- For the Balls:
- 4 Good Green Stuff Bars
- 4 Large Chewy Soft Medjool Dates
- 2.5 Tbsp Almond Butter
- 1 Scoop of Good Green Stuff
- 1 Tbsp Flaxseed Meal
- 2 Scoops Clean Lean Protein Smooth Vanilla
- 1/2 tsp Vanilla Extract
- 2 Tbsp Coconut Oil
- Coconut Dust:
- 1 Cup Unsweetened Fine Desiccated Coconut
- 1 Scoop Good Green Stuff
In a food processor, add all the ingredients for the balls by first breaking the bars into small pieces, chop the bars in the food processor first until fine, once chopped add everything else and blend until you have a dough-like consistency and not too crumbly either, if it is a bit too crumbly then just add a little more almond butter to the mix.
Once done and you’ve reached the dough consistency, you can start rolling your balls, when you have rolled out all your balls, set them aside, then in a zip-lock bag add all the coconut dust ingredients, take half of the balls you’ve made and add them into the bag, zip the bag up and allow to mix the balls around by shaking the bag around once they balls are completely covered, remove them, then take the other half and do the same, the balls will now have a soft snow like outer layer, once all the balls are dusted, you can then place your balls in a airtight jar and store in the fridge.
Best chilled in the fridge for an hour before enjoying.
You may have some extra coconut dust left over, so if you do you can just keep it in the zip-lock bag or pop into another jar and keep in the fridge, you can also use the leftover coconut dust for smoothie toppings, yoghurt or even breakfast cereal toppings.
