Berries & Cream Coffee Protein Pancakes

Ingredients

  • Pancake Mix:
  • 2 Tbsp (15g) Clean Lean Protein Smooth Vanilla
  • 2 Tbsp (25g) coconut flour
  • 1 large egg and 1 large egg white
  • 1/2 large banana
  • 1/3 cup plus 1 Tbsp cold freshly brewed coffee
  • 3/4 tsp baking powder
  • 1/2 ground cinnamon
  • 1/2 tsp vanilla extract
  • Optional 1-2 tsp stevia or coconut sugar
  • Optional 1 tsp maca powder
  • Tanna Farms Coconut Oil for cooking
  • Toppings:
  • 100g dairy free yoghurt
  • 1 Tbsp Clean Lean Protein Smooth Vanilla
  • Fresh Berries of choice (strawberries, raspberries, blueberries)
  • Optional 1 Tbsp maple syrup to serve

Method

  1. Blend all ingredients until smooth. The batter should be thick, but add a little more coffee if it looks too dry OR more coconut flour if it looks too runny. Set aside for a few minutes.
  2. Mix the yoghurt with the protein powder for the “cream” topping, taste and add stevia if desired. Refrigerate until serving.
  3. Cook pancakes over low heat in a pan greased with Tanna Farms coconut oil.
  4. Get stacking! Top the pancakes with the yoghurt mixture and fresh berries.
  5. Devour!
