Vanilla Choc Layered Brownie

Layered and full of goodness! made using Rich Chocolate, Vanilla Caramel Kids Good Stuff and Rich Chocolate Clean Lean Protein.

Ingredients

Vanilla Caramel Mousse Layer

2 Servings Vanilla Caramel Kids Good Stuff

500g Coconut Yoghurt


Chocolate Mousse Layer

2 Servings Rich Chocolate Kids Good Stuff

500g Coconut Yoghurt


Chocolate Sauce

150g Chocolate (I used Sugar Free Dark Chocolate)

150ml Coconut Cream


Chocolate Brownie

1 Serve Rich Chocolate Clean Lean Protein

1 Cup Almond Flour 

2/3 Cup Xylitol

2 Tbsp Cocoa

1 tsp Baking Powder

½ tsp Salt

¼ Cup Almond Milk (or Milk of choice)

1/3 Cup Melted Butter (Use Melted Coconut Oil for a Vegan Version and use melted not hot Butter or Coconut Oil) 

2 Eggs (or Flax Egg for a Vegan Version)

1 tsp Vanilla 

Anything that comes in layers has to be good! Anything also layered in vanilla and chocolate WILL be good! Drop everything and make this delicious Vanilla Choc Layered Brownie right now, you wont regret it! Made using Rich Chocolate Kids Good Stuff, Vanilla Caramel Kids Good Stuff and Rich Chocolate Clean Lean Protein, this brownie will knock your socks off! Created by Kerry Locatelli, it is a delicious guilt-free dessert that you can definitely go back for seconds.... or thirds. Suitable for the whole family, dietary requirements and all.

Method

Vanilla Caramel Mousse Layer

Mix the Kids Good Stuff with the Coconut Yoghurt until it’s a Mousse like consistency.

Chocolate Mousse Layer

Mix the Kids Good Stuff with the Coconut Yoghurt until it’s a Mousse like consistency.

Chocolate Sauce

Melt the Chocolate and mix with the Coconut Cream until smooth

Chocolate Brownie

Mix the Clean Lean Protein, almond flour, cocoa and baking powder in a bowl. 

Blend the almond milk, melted butter (remember just melted, not hot), xylitol, eggs and vanilla and add to the dry ingredients. 

Mix well and add to a baking dish. 

Make at 170C for 15-20mins (keep an eye on it so it doesn’t burn).

Once all the layers and brownie are made, its time to layer the dessert. Start with a layer of brownie, then drizzle half the chocolate sauce over the brownie, then a layer of chocolate mousse and then a layer of vanilla caramel mousse (use half of all the ingredients for the first layer and then the rest for the second layers). Repeat the layers. 

Finish with some chocolate shavings and crumbed chocolate brownie. 

This can be made in a big bowl or in jars or glasses for individual servings. Enjoy!
