Getting enough protein can be a little bit of a challenge on a vegan diet. These Ultimate Vegan Burgers pack a protein punch- giving you around 20g of plant-based protein per serve. They can be served on your favourite bun (gluten free or otherwise) or wrapped in lettuce. Make sure you jazz yours up with your favourite sauces and salads- and even some vegan cheese?

Method

Give the black rice a good rinse and place in a pot on the stove. Add 2x cups water to the rice and bring to the boil. Cover and simmer for 25mins. Turn the heat off and let it stand with the lid on, for 10mins.

While the rice is cooking, chop the mushrooms, add them to a pan and saute with avocado oil. Add the onion, garlic and smoked paprika and saute a little longer. Add the tamari sauce, mix and turn the heat off. Put the mushrooms to one side and allow to cool.

Lightly roast the walnuts in the maple syrup- careful not to burn them. Set them to one side too.

Rinse the black beans thoroughly and add to a food processor. Add the Clean Lean Protein and flax meal. Now add the cooked black rice, walnuts, mushrooms and the salt and pepper. Pulse to combine. Once you have the desired consistency, shape into 8 patties (or 4 extra-large patties). Place these in the fridge to chill and set (at least 20-30mins).

Patties can be cooked on the BBQ or in a pan on the stove. Brush with oil on each side if using a BBQ grill or add oil to the pan if cooking on the stove top. Set to a medium heat and cook for about 7mins on each side. Brush each pattie (on both sides) with the worcestershire sauce.

Serve with your favourite burger buns, vegan cheese, sauces, salad and pickles as desired. A beetroot chutney, burger sauces and pickles really complement the flavour of these patties. These are delicious as a bun less burger too- just wrap in iceberg lettuce and enjoy!
