Tiramisu Chia Seed Pudding
Delicious, protein packed tiramisu for a healthy Christmas. Made with Clean Lean Protein Real Coffee.
1 cup Almond Milk
4 Tbsp Chia seeds
1 Serve Real Coffee Clean Lean Protein
1/2 cup Coconut Yogurt
1 Tbsp Xylitol (or maple syrup if you prefer)
½ tsp Vanilla
1 Tbsp Cocoa Powder
1 Tbsp Hot Water
2 Tbsp Strong Coffee (already brewed- instant coffee in hot water works well. I used ½ tsp mixed in 2 tsp boiling water)
1/2 cup Coconut Yoghurt
½ tsp Vanilla
1 tsp Powdered Xylitol
I just love the flavours of Tiramisu and having a healthier option I can include in my diet regularly works for me! There is plenty of protein, fiber and good fats to fuel you and keep you going; and plenty of yumminess to make you feel completely satisfied. Blend the almond milk, coconut yoghurt, Clean Lean Protein Real Coffee and xylitol together.
Stir in the chia seeds and let it stand for 5 mins.
Mix the cocoa powder with 1 tablespoon hot water and add to a large bowl.
Add the coffee to a 2nd bowl and the vanilla to a 3rd.
Divide the chia seed mixture evenly between the 3 bowls and mix well.
Add a tablespoon of the cocoa chia mix to the coffee chia seed mix and mix well.
Mix the vanilla and powdered xylitol into the second lot of coconut yoghurt.
Place all the bowls in the fridge for at least 30mins (even better for a few hours). The chia seed mixtures need to have thickened enough to hold their layers.
Layer the chia seed mixtures in serving glasses or bowls- starting with chocolate, coffee, vanilla and then finishing with the coconut yoghurt layer. Place in the fridge to allow it to fully set- this will take a couple hours or even overnight.
Dust with cocoa powder before you serve.
