Lemon Energy Balls
1/2 cup cashew nuts
1/2 cup almonds
1/2 cup desiccated coconut, plus more for rolling
1/4 tsp sea salt
1/4 cup almond butter
1/2 cup dates
1/2 tsp vanilla extract
Juice of 1 large lemon
Zest of one large lemon
1. Using a blender, or food processor, blend the almonds, cashew nuts, coconut, sea salt and Clean Lean Protein into a fine crumb.
2. Add the almond butter, dates, lemon zest, lemon juice and vanilla extract.
3. Pulse to combine. Take a tablespoon of the mixture roll it into balls and then coat in coconut.
4. Store in the fridge for up to 5 days or freeze up to 4 weeks.
