Raspberry & Goats Feta/ Vegan Cream Cheese Omelet
The ultimate keto breakfast.
Ingredients
2-3 Eggs
Raspberry Chia Seed Jam *
40g Goats Feta Cheese or Vegan Cream Cheese
Salt
Pepper
Sugar free icing sugar (optional)
*Raspberry Chia Seed Jam
100g Raspberries (frozen)
1 Tbsp Water
1 tsp Lemon Juice
1 ½ Tbsp Erythritol
1 Tbsp Chia Seeds
Method
Whisk the eggs in a bowl and season.
Pour into a hot pan (with a little oil if needed).
Once the egg starts to set, flip the omelet to cook the other side.
Add the raspberry chia seed jam and the goats cheese or vegan cream cheese over half of the omelet.
Fold over and serve.
This is extra yummy with some sugar free icing sugar sieved over the top.
Raspberry Chia Seed Jam
Add the raspberries, water, lemon and erythritol to a pot and bring to the boil.
Mash and mix with a fork.
Remove from the heat and add the chia seeds.
Allow the mixture to sit and set, preferably a few hours or even overnight in the fridge.
