Purple Kumara Soup
Purple kumara is pretty special. I buy it whenever I see it available, and I just love cooking with it. It's filled with flavour, loaded with nutrients and brings its beautiful depth of colour to the meals I cook. This soup is flavoured with garlic, ginger, chili and a hint of orange. The Clean Lean Protein increases the protein content, so you can feel even more satisfied and make sure you are getting this essential nutrient throughout the day.

2 large Purple Kumara (800g-1kg)
1 Serve Clean Lean Protein Just Natural
1 Tbsp Ginger
3 Cloves Garlic
1 Tbsp Chili
1 liter Vegetable Broth (Chicken Bone Broth is a great option too)
Chop the onion and shallot and fry in a little avocado oil in a large pot.
Grate the ginger and garlic and add to the pot.
Finely slice the chili and add to the pot.
Chop the kumara into chunks and add to the pot.
Let the kumara cook along with the contents of the pot.
Grate the zest and then juice the orange.
Add the broth, orange juice and zest to the pot.
Bring to the boil and simmer gently til the kumara is cooked through and soft.
Take off the heat, add the Clean Lean Protein and blend.
Season to taste. Enjoy!
