Pretty In Pink Chia Seed Pudding

A super fun breakfast, high in protein. Made with Clean Lean Protein Wild Strawberry.

Ingredients

400ml Coconut Milk

1 Serve Wild Strawberry Clean Lean Protein

1 Tbsp Matakana Superfoods Dragonfruit Powder

1 Tbsp Xylitol

6 Tbsp Chia Seeds

To serve:

Fresh fruit or a sprinkling of muesli.

So, so pretty, this vibrant chia seed pudding makes a beautiful breakfast. The dragon fruit powder gives it the exquisite colour and compliments the flavour of the Wild Strawberry Clean Lean Protein. Dragon fruit is full of vitamins, minerals, and beneficial plant compounds such as polyphenols, carotenoids and betacyanins. It may boost your iron levels as dragon fruit has iron along with vitamin c, which enhances its absorption. Its great for your gut as it contains prebiotics which promotes the growth of healthy bacteria in your gut. The combination of Clean Lean Protein and chia seeds keep you feeling fuller for longer, so you can focus on getting the most out of your day.

Method

Blend all the ingredients (except the Chia Seeds) together. 

Add the Chia Seeds, mix well and allow to stand for 5 minutes. 

Mix again, scraping down the sides and let it stand for another 5 mins. 

Mix again, pour into glasses and place in the fridge for 4 hours or overnight. 

Enjoy!
