Nutty Protein Bar

Dairy Free Gluten Free Low Sugar Vegan
The nut bar of all nut bars! Made with Clean Lean Protein Just Natural.

Ingredients

2 Serves Clean Lean Protein Just Natural

¼ Cup Almond Flour

¼ Cup Quinoa Flakes

1 Cup Sesame Seeds

¾ Cup Roasted Peanuts

¾ Cup Currants

2 Tbsp Chia Seeds

½ Cup Coconut Sugar

½ Cup Xylitol

1 Cup Water

1 tsp Salt

1 tsp Cinnamon

3 Tbsp Coconut Oil

1 Tbsp Avocado Oil

This nutty protein bar is so delicious and full of nutrients, you will be left wondering why you ever bought one from the store! It is packed with protein - sesame seeds, peanuts, chia seeds, quinoa flakes, and Clean Lean Protein Just Natural. For some extra sweetness, try using Smooth Vanilla Clean Lean Protein.

Method

Add the water, coconut sugar and xylitol to a pot and bring to a gentle boil. 

Turn the heat down and allow to simmer gently for 10mins.  

Add the Clean Lean Protein, almond flour, sesame seeds, roasted peanuts, currants, salt, cinnamon, and chia seeds to a large bowl and mix well.

Melt the coconut oil. 

Add the coconut sugar mixture, coconut oil and the avocado oil to the bowl of dry ingredients and mix thoroughly. 

Pour into a greased (or baking paper lined) brownie tin and bake at 155-160C (fan forced) for 20 mins. 

Keep an eye on it to make sure it doesn’t burn. Once out of the oven, allow to cool and then place in the fridge for 15mins before cutting into the desired size bars/bites. 

These can be a little crumbly, especially at first- they set better overnight and best kept in the fridge.
