Neapolitin Ice Cream Cake With Chocolate Sauce
A flavour and nutrient explosion with all three Kids Good Stuff flavours.
Ingredients
Chocolate Layer
250ml Coconut Yoghurt
250ml Coconut Milk
2 Serves Rich Chocolate Kids Good Stuff
2 Tbsp Xylitol
1 tsp Cocoa
Vanilla Caramel Layer
250ml Coconut Yoghurt
250ml Coconut Milk
2 Tbsp Xylitol
2 Serves Vanilla Caramel Kids Good Stuff
Strawberry Layer
250ml Coconut Yoghurt
250ml Coconut Milk
2 Serves Wild Strawberry Kids Good Stuff
2 Tbsp Xylitol
1/8 tsp Beetroot Powder
Chocolate Sauce
100g Chocolate Chips (I used dairy free, sugar free)
60ml Coconut Milk (more if desired)
Can't decide on a flavour? Have all three!!! These Neapolitin Ice Cream Cakes are so delicious and creamy, definitely better than store bought. The best thing about them is that you can create any shape you want, mini cakes, on a stick, larger cake... the possibilities are endless! Made using all three flavours of Kids Good Stuff - Rich Chocolate, Wild Strawberry and Vanilla Caramel. Created by Kerry Locatelli, these are definitely a summer treat not to be missed!
Method
All the layers need to be blended separately.
Start with the strawberry layer by placing all the ingredients into the blender, blend until smooth and then add it to the ice cream maker. Churn for 10mins.
While the strawberry layer is churning, blend the vanilla caramel layer and the chocolate layer and place both in the freezer to get them to cool quicker.
Once the strawberry layer has had its time in the ice cream maker, quickly scoop the first layer into the muffin tray or popsicle mold. Place in the freezer.
Quickly rinse the ice cream maker (with cold water) and add the vanilla caramel layer and churn for 10mins.
Take the molds with the strawberry layer out of the freezer and add the second layer of vanilla caramel and return to the freezer.
Rinse the ice cream maker again (with cold water) and add the chocolate layer to churn for 10mins.
Add the chocolate layer to the molds and place back in the freezer to fully set (may take up to 4 hours).
Make the chocolate sauce by melting the chocolate and mixing in the coconut milk. Add as much or as little coconut milk to achieve the desired consistency.
When you are ready to serve the ice cream drizzle with chocolate sauce. Enjoy!
