A refreshing summer soup made with Just Natural Clean Lean Protein.
1 serve Just Natural Clean Lean Protein
1kg Tomatoes (good quality and ripe)
1 Large Cucumber
½ Red Capsicum
½ Green Capsicum
½ Small Red Onion
1 Clove garlic
1/3 cup Extra Virgin Olive Oil
½ cup Water
2 Tbsp Apple Cider Vinegar
The best cold summer soup ever! Packed with vegetables and protein, this will be your new go-to summer dinner. It's so refreshing and only takes 15 minutes to make. Made with Just Natural Clean Lean Protein, by Kerry Locatelli.
Roughly chop the veggies into small pieces.
Add all the ingredients (except the Clean Lean Protein) to the blender and blend.
Once the ingredients start to come together, add the Clean Lean Protein and blend a little more.
Add more water if you want a thinner gazpacho.
Season to taste and drizzle with extra Olive oil. Delicious served with toasted Protein Power Bread.
Note: the more you blend the Gazpacho ingredients, the more aerated it will be. I prefer to chop the veggies into smaller pieces so that all the ingredients blend to a smooth Gazpacho quickly, with less air incorporated
