Dragonfruit Panna Cotta

A dessert made to be eaten at breakfast. Made with Kids Good Stuff Wild Strawberry.

Ingredients

375ml Coconut Milk

1 serve Wild Strawberry Kids Good Stuff

Pinch Salt

1 Tbsp Xylitol

1 Tbsp Matakana Superfoods Dragonfruit Powder

125ml Boiled Water

3 tsp Gelatin *

Who said panna Cotta could only be eaten for dessert? Why not for breakfast? If you have worked with Dragonfruit Powder, you will understand my obsession! Not only is it loaded with goodness, its a colour that makes just about any recipe pop! Kids Good Stuff is packed with goodness too, so naturally this is a match made in heaven. What a beautiful way to start the day with a Dragonfruit Panna Cotta.

Method

Wisk the gelatin into the Boiled water until completely dissolved.

Blend the coconut milk, pinch salt, xylitol, dragonfruit powder and Kids Good Stuff together.

Add the Gelatin mixture to the blended mixture and mix well until combined (don’t be tempted to blend again, just mix with the whisk or a fork**). 

Pour the mixture into Jelly moulds or a muffin tray (this recipe made 6 Panna Cotta in a standard muffin tray). Place in the fridge- they need about 4 hours to set. 

Serve with low sugar, strawberry rice bubbles (or your favourite museli for an adult version) or fresh strawberries (or fresh seasonal fruit) for a delicious and nutritious way to start the day.

* Check the guidelines for the Gelatin you have. The one I use has a ratio of 3 tsp to 500ml liquid.

** Blending in a blender again will over-aerate the mixture. The Panna Cotta might separate and might not set as nicely.
