Chocolate Peanut Butter Basil Seed Pudding
Nothing complicated over here, just super simple nutritious deliciousness!
Basil Seeds are loaded with goodies. They are high in calcium, magnesium and iron and they are a great source of fiber. Chia Seeds are very similar, but Basil Seeds have just a little bit more of each. They also contain flavonoids, polyphenols and plant based Omega 3 fatty acids, giving them antioxidant and anti-inflammatory properties. Yes Please!

250ml Coconut Milk
1 Serve Rich Chocolate Kids Good Stuff
1 Tbsp Peanut Butter
3 tsp Basil Seeds
Blend the Coconut Milk, Kids Good Stuff and Peanut Butter together.
Add the Basil Seeds and mix well with a fork or whisk.
Allow to stand for 5 mins and then mix well again (the Basil Seeds will start to settle and swell at the bottom of the blender cup, we want to stir the seeds up and distribute them throughout the liquid).
Put the basil Seed Pudding in the fridge for 20mins.
*The longer you leave it to stand, the thicker it gets. I prefer to eat it 20-30mins after I have made it. I enjoy the flavour and texture more.
